Quinoa with Chicken Sausage and Roasted Vegetables

Here is a quick 30-minute healthy weeknight meal idea:  

Quinoa with Chicken Sausage and Roasted Vegetables


Combine brussel sprouts (halved), red bell pepper (quartered), garlic cloves (crushed), and shallots (peeled and halved) with some olive oil, salt, and pepper.

Throw them onto a foil-lined baking sheet along with some chicken sausage links (I used Trader Joe's Apple and Chardonnay flavor) and roast in a 400 degree oven for about 20 minutes, turning the vegetables halfway through.


While the vegetables and sausages roast, cook some quinoa according to the instructions on the package.  This should take about 15-20 minutes.  Recommended:  Use chicken stock instead of water for more flavor.

Once the vegetables are nice and caramelized, remove them and allow them to cool a bit.  Then cut the peppers into smaller sizes and slice the sausages.

Combine everything together.  Add a drizzle of olive oil, a squeeze of lemon juice, and some salt and pepper.  And, in my case, a few dashes of hot sauce.
